Makes 6 Servings
Cooking + Prep Time: 50 minutes


2 tbsp. of oil, olive
2 diced onions, large
6 chopped garlic cloves
1 x 19-oz. can of rinsed, drained black beans
1 x 16-oz can of tomato sauce, no salt added
2 diced tomatoes, ripe
2 tsp. of cumin, ground
1/2 tsp. of pepper, cayenne
3/4 cup of chopped cilantro, fresh
1/2 cup of green onions, chopped
1/4 cup of chopped cilantro, fresh

Cooking Instructions:

Heat oil in large-sized pot on med-high heat.
Add onion and garlic and cook in oil for five to seven minutes, till onions become translucent.

Stir in beans, diced tomatoes, tomato sauce, cayenne pepper and cumin.
Reduce the heat level to med-low.
Simmer for five minutes.
Add 3/4 cup of cilantro.
Simmer for two minutes more.
Stir in green onions.
Remove pan from the heat.

Use 1/4 cup of cilantro for garnishing, and serve.
