Makes 12 Servings
Cooking + Prep Time: 35 minutes



12 empanada discs, frozen, thawed
6 scrambled eggs, large
1 beaten egg, large
1 cup of pepperoni, diced
1 diced jalapeno, small
1/2 cup of queso fresco cheese crumbles

Cooking Instructions:

Remove patty discs from the freezer. Allow them to thaw.
Scramble eggs. Add pepperoni and jalapenos. Season as desired.

Spray frying pan with non-stick spray. Fry the eggs. Then, remove from the heat and allow to cool.
Preheat oven to 375F.

Place the patty discs on wax paper. Place 2 tbsp. eggs in middle of discs.
Sprinkle with queso fresco.

Moisten patty edges with water and a pastry brush.
Fold discs, then bring edges together. Press to seal. Glaze tops with a beaten egg.
Bake on oiled cookie sheet in 375F oven for 10-12 minutes, till golden.

Serve with chipotle, salsa, sour cream and/or guacamole.
