1/3 cup of oil, olive
1 chopped onion, large
1 chopped pepper, green
2 minced garlic cloves
1 & 1/2 lb. of 1” cubed stew beef
1 can of tomatoes, stewed
2 cups of broth, beef, low sodium
3 peeled, cubed sweet potatoes
2 peeled, cubed potatoes, white
2 tbsp. of sugar, granulated
1 peeled, cubed winter squash, large
7 oz. of apricots, dried
Salt, kosher, as desired
Pepper, ground, as desired
1 cup of corn, frozen
In large-sized pot, heat oil. Sauté green peppers, garlic and onions for 8-10 minutes, till soft and golden.
Add beef to pot.
Cook over med-high and turn till all sides are browned.
Add beef broth, tomatoes, sugar, potatoes, apricots and squash.
Reduce heatto simmer. Cover pot.
Simmer on low heat for an hour. Season as desired.
Add broth if stew is thicker than you like.
Cook till beef becomes tender, about 25 minutes more.
Stir in frozen corn.
Simmer for 5 10 more minutes.
Serve.
