3 tbsp vegetable oil
4 canned franks (drained)
2½ ounces plain flour
2 eggs
â…– cup milk
Salt and freshly ground black pepper
Oil (to fry, as needed)
1 onion (peeled and finely sliced)
2 cloves garlic (peeled and chopped)
2 tsp plain flour
1½ cups vegetable or chicken stock (as needed)
1 tsp prepared French mustard
2 tsp soy sauce
Salt and black pepper
Preheat the main oven to 445 degrees f.
Evenly divide the oil between 4 individual pie dishes.
Cut the franks in half to fit in the pie dishes. Divide the pieces evenly between the prepared pie dishes,
and cook in the oven until beginning to brown, for 5-10 minutes.
Meanwhile, add the flour to a bowl.
Add the eggs to the flour, mixing until combined and smooth.
A little at a time, whisk in the milk and season with salt and black pepper.
Once the pie dishes are hot, pour ¼ of the batter quickly into each one, over the franks.
Cook in the oven for 20-25 minutes, until the surface, is golden brown.
Do not open the oven before the cooking time has elapsed.
Serve with gravy and enjoy.
To prepare the gravy: Heat the oil in a frying pan.
Add the onion along with the garlic to the pan and over moderate heat fry, until golden.
Add the flour to the pan and cook while stirring continually for 3 minutes.
Slowly add approximately half of the stock, stir thoroughly throughout the adding process.
Finally, add the French mustard and soy sauce and season with salt and pepper to taste.
You may want to add more stock as needed to achieve your preferred consistency of gravy.
