Cooking + Prep Time: 40 minutes
3/4 cup of flour, all-purpose
1/2 tsp. of each of baking powder; nutmeg, ground; salt, kosher
1/4 tsp. of pepper, black
1 x 10-oz. pkg. of frozen, thawed, drained spinach, chopped
1/2 chopped onion, small
1/2 cup of milk, whole
2 beaten eggs, large
To fry: oil, olive
Whisk together the flour, nutmeg, baking powder, kosher salt & ground pepper in medium bowl.
In separate bowl, mix spinach with onions.
Add milk, then eggs to this mixture and combine well.
Stir the flour mixture from step 1 into the spinachmixture till you have an evenly combined batter.
Heat 1” oil in deep, large frying pan on med-high.
Drop the batter, 1 tbsp. for each fritter, in heated oil.
Fry three to four minutes on each side, till outside edges turn golden brown.
Remove fritters and drain on plate lined with paper towels.
Then, repeat with the rest of the batter and use additional oil if needed.
Serve.
