Nonstick baking spray
6½ cups unsalted butter (softened)
1½ cups granulated sugar
4 large-size eggs (room temperature)
1 tsp vanilla extract
2 cups baking flour
½ cup canned red or black cherry pie filling
Powdered sugar (to dust)
Preheat the main oven to 350 degrees F.
Spritz a 13x9" baking pan with nonstick baking spray.
In a bowl, at moderate speed, and using an electric mixer,
cream the butter with the sugar until smooth, for approximately 2 minutes.
One at a time, add the eggs, beating well between additions.
Add the vanilla extract followed by the flour and mix well.
Spread the dough evenly into the prepared baking pan.
Using a toothpick, score the dough into 24 (2") squares.
Add a teaspoonful of the pie filling to the middle of each scored square.
Bake in the oven until springy to the touch, for 30-35 minutes.
Allow the squares to cool to room temperature.
Dust lightly with powdered sugar before slicing and serving.
